WHere is an easy take on a cocktail featured on the seasonal menu. Designed as a batch prepared mix which is bursting full of tastes of the Christmas time, which makes it ideal for a celebration. Reserve the remaining citrus syrup you can use for morning drinks, sweets, or to mix more rounds of this cocktail.

Makes enough for 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Combine the listed items into a saucepan, bring to a gentle boil, mixing until the sugar dissolves. Then, remove from the heat allowing it to cool down fully. Transfer into an clean bottle, seal and refrigerate it in the fridge, it can be stored for up to a month.
For the Batch Mix: Mix the specified liquids into one large bottle, allow it to infuse for one hour, then strain preferably using a fine cloth, to ensure it's completely strained.
For serving: Measure 85ml from the cocktail base into a stirring glass packed with ice, gently stirring lightly for one minute to chill. Strain into a cold coupe glass or equivalent, top with the cranberries and complete it by giving it a light spray with the mandarin essence above the glass.
